Fujikawaguchikomachi in Yamanashi uses the underground water of Mt. Fuji to cultivate ancient rice. "Ancient rice" refers to rice that maintains the characteristics of the original wild rice, and it is richer in protein, vitamins and minerals than ordinary rice. The plants are resilient in the face of drought and cold water, can also grow in wastelands, and reach heights in excess of 1 m. However, they are considered difficult to cultivate because they are easily blown down by wind, and the rice itself is small. Hokuroku Sousui uses an impregnated oil of black rice grown by Kawaguchiko Ancient Rice Research Group that cultivates ancient rice varieties.
